Will the production org IDs change when we move it to live?
I am using hard coded production org ids for some use cases. I want to know if these IDs will remain same or is there a use case where they can change.

First of all, it is never a good practice to hard code IDs. There are always workarounds for every case and i can go on and on about why using hard coded ids are such a bad idea.
But coming back to question, NO, production IDs do not change unless you migrate from one org to another or delete and insert a record. -
Hazel is right your production org ID will not change but your sandbox and dev org IDs will change all the time. So if you are hard coding your org Id then you can only do testing in the live production environment.
