We can revome all the special charaters from the string in apex by using .replaceAll().
example:
string testString = 'Welcome - %% to !!@@* Sales ##force^&';
testString = testString .replaceAll('[^a-zA-Z0-9\\s+]', ''); -
string testString = 'Welcome - %% to !!@@* Sales ##force^&';testString = testString .replaceAll('[^a-zA-Z0-9\\s+]', '');
